The White Room Amsterdam Turns Dinner Into Storytelling

First opened in 1885 as De Witte Zaal (The White Hall), The White Room is one of Amsterdam’s oldest dining rooms. Its identity still rests on that legacy today, with white and gold detailing, hand-painted frescoes and original architectural features shaping a setting that feels both intimate and historic. Recognised as a national monument, it carries the atmosphere of a preserved landmark, but without losing its warmth.

At the centre of the experience is Chef de Cuisine Tristan de Boer, whose cooking reflects Amsterdam itself. Born and raised in the city, he works with Dutch ingredients while drawing inspiration from Indonesian, Japanese, Thai and Surinamese cuisines, creating dishes that feel refined, modern and full of character. The result is a style of cooking shaped by storytelling through flavour rather than formality for its own sake.   

That same balance carries through the wider experience. Head Sommelier Frederico Figueiredo curates wine pairings and homemade non-alcoholic drinks designed to complement each dish, while Maître Diana Negru helps shape a guest experience that feels seamless and intuitive from start to finish. It is this combination of cuisine, pairing and atmosphere that gives The White Room its distinct identity.

More than a Special Occasion

Guests can choose between the Gold and Green tasting menus, both priced at €185 per person, with wine pairings starting from €119. The restaurant is open for dinner from Wednesday to Saturday and for lunch on Saturdays, while its 2026 calendar also includes experiences such as winemakers masterclasses, seasonal lunches and special dinners that extend the story beyond the regular menu.   

The White Room Amsterdam is not simply about fine dining in the classic sense. It is about stepping into a space where history, creativity and modern taste meet, and where every course feels considered long before it reaches the table.
