Grand Hotel Brioni: A Modern Classic on the Adriatic
A few days in Pula, where quiet luxury, Mediterranean rhythm and the raw beauty of the Istrian coast come together. There are places that feel familiar from the moment you arrive, even when you have never been there before. Grand Hotel Brioni was one of those places for us.
Less than two hours after leaving the Netherlands, we arrived on the Verudela peninsula, just outside Pula. Pine trees lined the road, the Adriatic appeared between the branches and the pace of the day seemed to slow before we had even checked in.
The hotel sits directly on the rocky coastline, surrounded by sea and Mediterranean greenery. It is large, with 227 rooms and suites, but never felt busy during our stay. Instead, there was space everywhere: around the pool, along the water and throughout the hotel itself.
DESIGNED WITH THE SEA IN MIND
Grand Hotel Brioni originally opened in 1972 and returned in 2022 after an extensive transformation. The building still has the presence of a classic grand hotel, while the interior feels contemporary and closely connected to its setting.
Blue runs through the entire property, softened by natural wood, stone, Croatian art and subtle references to Pula’s Roman past. Lemon trees and pine trees surround the terraces, and the Adriatic is rarely out of sight.
Our room faced the sea, and that view became part of the daily routine. The interiors are calm and comfortable, with generous beds, a choice of pillows and Acqua di Parma products in the bathroom. A beach bag waits in the room, while every floor has its own Butler’s Corner, where guests can select drinks, snacks and local products throughout the day.
HOW THE DAYS UNFOLD
Mornings started with a swim in the Adriatic or a workout in the Technogym-equipped fitness centre. The gym is spacious and seriously equipped, with cardio, strength and resistance equipment for those who prefer not to leave their routine at home.
Breakfast followed outside at Brioni Forum. Proper barista-made coffee, eggs prepared to order, fresh fruit, pastries, champagne and caviar, all enjoyed with the sea in front of you.
After that, there was little reason to plan too much. The 80-metre seawater infinity pool stretches along the coastline, while the rocks below offer direct access to the remarkably clear Adriatic. Some afternoons are made for the water; others for disappearing into the spa.
GEMMA DI BRIONI
The hotel’s Gemma di Brioni spa deserves more than a passing mention. Spread across two levels, it brings together an indoor pool, saunas, hydrotherapy and a wide range of treatments in an atmosphere designed for complete privacy and relaxation.
The treatment menu includes facials, body rituals, massage and non-invasive beauty treatments, with luxury skincare brands and specialist therapies selected for different needs. There are also five treatments created specifically for men, from skincare and revitalisation to deeper relaxation and recovery.
This is the kind of spa where an hour can very easily become an afternoon.
FROM LUNCH TO GOLDEN HOUR
Food is woven naturally into the day here.
Lungo Mare serves fresh fish and seafood close to the water, while Sophia offers a more intimate setting for dinner, with premium ingredients and a carefully considered wine list. Breakfast and relaxed dining take place at Brioni Forum.
Our favourite moment came just before dinner. Sitting outside with an aperitivo as the light softened across the Adriatic, with nowhere else to be and no reason to hurry.
WHILE YOU’RE HERE
Grand Hotel Brioni makes staying put dangerously easy, but Istria deserves to be explored.
Start in Pula with a guided walk through the city’s remarkable history, from the ancient Roman Arena and underground passages to its old streets, squares and harbour.
A short drive away in Vodnjan, the Chiavalon family produces some of Istria’s finest extra virgin olive oils. A tasting here completely changes the way you think about olive oil, particularly when you discover the difference in flavour, intensity and texture between varieties.
For a day on the water, take a boat towards Island Levan, a small sandy island surrounded by clear Adriatic water. Swim, have lunch by the sea and spend a few hours doing very little at all.
Then there are the Brijuni Islands, the fourteen-island archipelago that gave Grand Hotel Brioni its name. Once a retreat for presidents and international stars, today it combines extraordinary history with untouched nature just off the Istrian coast.
We came to Grand Hotel Brioni for a few days by the sea. What stayed with us was not one particular moment, but the rhythm of the place. Morning swims. Long breakfasts. Time to train. Quiet afternoons by the water or in the spa. Aperitivo as the sun begins to set. Good food and genuine hospitality.
And that rare feeling that, for a few days at least, nothing needs to happen quickly.
